Lazy Samoas

These were always my family's favorite Girl Scout cookies.  We had to buy like 4 boxes of them and they were gone in a matter of days.  I got this recipe from the cookbook Vegan Cookies Invade Your Cookie Jar.  I made a couple of changes to accommodate what I had on hand. The recipe calls for all-purpose flour, but I used Whole Wheat Instead and I did not have coconut oil so I used Safflower Oil. They turned out so delicious and so similar to the real thing. Oyster Mushroom Rockefeller

This recipe was recently featured in Vegetarian Times magazine.  I have never had real oyster rockefeller so I can not say how close to an original it is, but I can say it was delicious. I had trouble finding oyster mushrooms in Lake Charles, finally I found dried ones at Albertson's.  For anyone who tries this recipe 1 oz. dried oyster mushrooms = 4 oz fresh oyster mushrooms.  Soak them in lukewarm water for 30 mins.-1 hour before cooking. This is one of William's favorite asian dishes.  Since he is the amazing husband that he is and he "gave up bacon for a girl" I try very hard to re-create all of the things he likes to eat Vegan style.  This was my version of this recipe after studying several other recipes and seeing what ingredients we had on hand at home. Sunday Funday Quiche

Every now and again we like to get together with our friends and let loose on Sunday.  This week we decided to have a brunch picnic in the park.  We had coffee, mimosas, fruit, hummus, fresh pitas, and vegan quiche.  Then we ran around in our clothes in the water park!!!  For my quiche I used a store bought vegan friendly crust and filled it with kale, baby portobellos, red onion, and tomatoes.  The crust is not necessary if you do not have access to one and you can...

Whole Wheat Pita Pocket Bread

This recipe is a little time consuming as it requires yeast and the bread needs time to rise.  So these are better to start in the morning if you want them for dinner time or just to stock pile for the week. These bubble up and form perfect pockets for sandwiches.  I use whole wheat pastry flour, but you can use regular whole wheat flour or unbleached white if you prefer. Quick Pita Bread

Kale Chips

I had never tried these before and now that I have I am addicted.  These crunchy little treats melt in your mouth.  This is the best guilt-free treat I can think of. Kale is full of vitamins A, C, and K.  It also has calcium, Iron, and protein. So make yourself a big bowl of these instead of popcorn and sit down for a movie. Kale Chips

Country Fried Tempeh Steak with Gravy

Grandma’s Orange Cookies Gluten Free
