She Crab Soup

Vegan She Crap Soup

Last night we made Vegan “She Crab” soup.  I used to work in a restaurant that served real she crab soup and it always smelled so good to me.  I was excited to try this one.  The soup itself was really easy to make, the problem we had was finding Oyster Mushrooms.  We went to three different stores and could not find any.  So we settled for Shitake Mushrooms thinking they might be similar since they have a woodsy taste.  I don’t know how different the oyster mushrooms would have made it taste, but it was so good this way.

Vegan She Crab Soup

Ingredients:

  • 2 cups oyster mushrooms, (Or sub. shitake) coarsely chopped
  • 2 tbsp white whole wheat flour
  • 1 tbsp cornstarch
  • cups non-dairy milk
  • 1 tsp onion powder
  • ¾ tsp vegetarian Worcestershire sauce
  • ¼ tsp mace (seasoning)
  • ¼ tsp hot sauce
  • ¼ tsp lemon zest
  • ½ tsp kelp Powder
  • a dash of Old Bay seasoning (or Tony Chachere’s)
  • 3 tbsp sherry
  • tsp white pepper

 

Instructions:

Coat a medium pot with a thin layer of water and add mushrooms. Cook over high heat until mushrooms are soft, turning brown and have released their juices. Set mushrooms aside. Add remaining ingredients to the pot and whisk until well combined. Bring to a boil over high heat. Once boiling, immediately reduce to medium and whisk as it thickens. Once it has slightly thickened, taste and adjust seasonings as needed and add salt to taste. Pour soup into two bowls and spoon cooked mushrooms in the center. Garnish with chopped fresh parsley and a light dash of paprika or Old Bay Seasoning.
