Vegan Doggie Birthday Cake

Today's post is for our four-legged friends. We have 2 dogs named Jolene and Townes, and both of them are Vegans.  Jolene is almost 5 years old and Townes is celebrating his 1st birthday this week.  Jolene has been Vegan for about 3 years and Townes has been since he was 3 months old.  They are very healthy and happy and full of energy. In honor of Townes's birthday I decided to bake a Vegan Doggie Cake.  They absolutely loved it!! In fact, Townes keeps going over to the counter where...

Vegan Irish Cream

As a bartender I know so many delicious shots that require Irish Cream.  Because of the whole dairy thing (blech!) I can not have it anymore.  So I did some searching online and found where my fellow Vegan's had been working on recreating the recipe.  I tried my own hand at it and the results are amazingly similar.  So, next party at my house, bring on the shots!!! Vegan Irish Cream Ingredients: 3/4 Cup Irish Whiskey 1 Pint...

Tofu Bacon

This is a really tasty recipe for Tofu Bacon.  William loves it when we get to make BLTs so I tried this new recipe for him.  I have done Tempeh bacon before which is delicious, but I think I like this one better... Vegan Tofu Bacon Ingredients: 1 package Extra Firm Tofu 1/2 Cup Water 1/2 Cup Tamari or Soy Sauce 2 Tbsp Nutritional Yeast

Whole Wheat Pita Pocket Bread

This recipe is a little time consuming as it requires yeast and the bread needs time to rise.  So these are better to start in the morning if you want them for dinner time or just to stock pile for the week. These bubble up and form perfect pockets for sandwiches.  I use whole wheat pastry flour, but you can use regular whole wheat flour or unbleached white if you prefer. Tips: *Do NOT peek in the oven as they cook.  Steam is required to make them...

Quick Pita Bread

William and I always buy pitas at the grocery store for sandwiches so I was excited to try this at home.  Imagine how much money you can save.  Plus I always like to know what every ingredient is that I am eating.  Have you ever read the ingredients for store bought pitas?  These easy pitas are great for dipping but they don't really form the pockets needed for sandwiches.  I will post my recipe for those also, but they take longer.  If you need them in a pinch these...

Kale Chips

I had never tried these before and now that I have I am addicted.  These crunchy little treats melt in your mouth.  This is the best guilt-free treat I can think of. Kale is full of vitamins A, C, and K.  It also has calcium, Iron, and protein. So make yourself a big bowl of these instead of popcorn and sit down for a movie. Kale Chips

Spaghetti Sauce

This was my first try at making my own spaghetti sauce.  I know there are a million different ways to make it, this was my own adaptation of a simple recipe.  I love the addition of the nutritional yeast and Fresh Basil from our garden.  Dried basil can also be substituted if you do not have access to fresh.  The nutritional yeast is optional butadds to the texture and nutritional value. Seitan – and I don’t mean the guy with horns

Seitan is made from vital gluten flour and is used as a protein.  It contains 24 grams of protein per 6 ounce serving.  It is super easy to make and can be frozen for several months. There are many different recipes available for the broth.  This is the one we use. This recipe makes enough for several servings and some extra to freeze. 2 Cups Vital Wheat Gluten Flour 1 tsp. Onion Powder 1 tsp. Garlic Powder 1 tsp. Ginger Powder (optional, I just really like it) 2 Cups water 3 Cubes of Not-Chick'n bouillon (or any flavor you choose) 6 Cups of water
