Vegan Porcupine Balls

Does anyone else have foods that you only like when your mom makes them?  This is a recipe from my Mom's collection that I decided to make Vegan.  It was a little bit of a challenge since the main ingredient in hers is ground beef.  Since I am able to make a pretty tasty beef substitute I thought I would give it a try.  It turned out really good. Porcupine Balls Makes 12 Ingredients: For "Beef": 1 1/2 Cups TVP 1 1/2 Cups Water 4 Tbsp Soy Sauce 2 Tbsp Vegan Worcestershire 2 Tbsp Nutritional...

Hot Tamales

So, it has taken me a while to get this recipe up.  This is mostly due to the fact that it is a long one and I have been procrastinating typing it up.  Tamales are a little time consuming to make, so I recommend attempting this one on a weekend or whenever you have a day off.  The results are amazing and so awesome since it is hard to find a good vegan hot tamale, or even a vegetarian one for that matter. I can assure you...

Taco Bell Style Mexican Pizza

Ever have a craving for one of those really bad for you treats like a Mexican Pizza from Taco Bell?  Before I went vegan every now and then I would have a Mexican Pizza with all beans, no meat.  They are delicious but probably not very healthy.  Now you can make your very own Vegan version of this at home. Slightly more healthy than it's fast food counterpart.  This is made with seasoned beans, but if you have it on hand, add a layer of TVP "ground beef", or gimme lean crumbles to your beans. You can...

Tofu Spinach Lasagna Rolls

We are finally feeling Winter here in SouthWest Louisiana and  I thought this one would be perfect for those cold nights.  For this recipe I recommend using whole wheat lasagna rolls, but you can use whatever you prefer.  Also you can find my recipe for spaghetti sauce here or you can use your favorite jar. Tofu Spinach Lasagna Rolls Ingredients: 1 package (16 oz) Whole Wheat Jumbo Pasta Shells 1 Package (14-16 oz) Firm Tofu

Cold Veggie Pizza

I served this one up at our Holiday Party this year and have had several requests for the recipe.  After much anticipation here it is for you.  And before anyone asks.  Yes, surprisingly Pilsbury Original Crescent Rolls are Vegan.  I had to do a little research on this and some issues arose as to the DATEM, diacetyltartaric acid esters of monoglycerides, which is often from animal sources, and is found in the ingredients list.  Luckily for us, someone wrote to Pilsbury and inquired on the matter.  Their entire response can...

William’s Mexican Pizza

This came from one night my darling husband wanted to cook for me.  I made a pizza crust earlier in the day for him to use, but you can just as easily get a store bought one if you can find one that is Vegan.  We do have a bread machine, which makes it a little easier to make breads and doughs when we want them, but you can make them at home by hand pretty easily too, it just takes a little more time.  I put the recipe at...

Oyster Mushroom Rockefeller

This recipe was recently featured in Vegetarian Times magazine.  I have never had real oyster rockefeller so I can not say how close to an original it is, but I can say it was delicious. I had trouble finding oyster mushrooms in Lake Charles, finally I found dried ones at Albertson's.  For anyone who tries this recipe 1 oz. dried oyster mushrooms = 4 oz fresh oyster mushrooms.  Soak them in lukewarm water for 30 mins.-1 hour before cooking. I also reduced the recipe a little since it would just be...

General Tao’s Tempeh

This is one of William's favorite asian dishes.  Since he is the amazing husband that he is and he "gave up bacon for a girl" I try very hard to re-create all of the things he likes to eat Vegan style.  This was my version of this recipe after studying several other recipes and seeing what ingredients we had on hand at home. General Tao's Tempeh Serves 3-4 Time: 30 minutes

Country Fried Tempeh Steak with Gravy

I definitely think this dinner was one for the record books.  William had been saying he wanted something filling and hearty for dinner so I decided to try doing a couple recipes from happyherbivore.com, as well as a couple of my own.  This time I cut the tempeh into just 2 pieces, which was delicious, but next time will do 4 to get extra breading on each one Country Fried Tempeh Steak with Gravy, Mashed Cauliflower, and Garlic Asparagus
