Orange Cookies for Halloween

This recipe was previously posted in a different form.  Click here for the Gluten Free version! This is the way I prefer to make them.  I try to balance out the unhealthy sugar and butter by using whole wheat flour and fresh oranges.  Add a little food coloring to the icing and some holiday colored sprinkles and you've got a treat for any holiday including the upcoming Halloween!! Grandma's Orange Cookies for Halloween (makes 3-4 dozen) Ingredients: 2 Cups Raw Sugar 1 Cup Earth Balance Vegan Butter 1/2 Cup Unsweetend Applesauce 1 Cup...

Easy Peanut Butter Cookies

I got a bit of a sweet tooth late last night and decided to make some peanut butter cookies.  I used to work at a restaurant in Wilmington, NC that had a bakery in it and we made these really easy peanut butter cookies.  The only problem with their recipe was, they used egg.  So I changed up the recipe a little and used more healthy versions of the ingredients like raw sugar and organic un-salted peanut butter.  You can use whatever peanut butter you have on...

Peanut Butter Blondies

This is my adaptation of a recipe I found in  Vegan Cookies Invade Your Cookie Jar by: Moskowitz and Romero. This dessert recipe is not only delicious, but really high in protein.  Peanuts are already a good provider and I added to the content by using garbanzo bean flour.  This flour adds only a slight nuttiness to the flavor and is great for desserts.  As a bonus, this flour is gluten free for anyone out there suffering that allergy. Top one of these off with a drizzle of my delicious chocolate sauce and enjoy. Peanut...

Vegan King Cake

In honor of the approaching Mardi Gras season, I decided I needed to veganize the traditional King Cake.  I see them all around me this time of year.  Every grocery store has them, and without fail someone always brings one to a party.  For myself and my fellow Vegans, it sucks that we can not take part in this tradition. So I took it upon myself to study up on how to make a King Cake and veganize the recipe.  For anyone not familiar...

What To Do With Leftover Cranberry Sauce

I made homemade Cranberry sauce from fresh cranberries this year.  It was delicious, but I had a lot leftover.  I started looking around online for ideas of what I could do with it so I wouldn't have to waste it.  I found lots of recipes for cranberry muffins which would probably be good, but just didn't sound very appealing to me.  What I did find that sounded appealing to me was Coffee Cake.  I couldn't find a vegan recipe so I took one that...

Apple Crisp – Happy Veterans Day

To celebrate Veterans day and to break up the soup monotony I made a special dessert for my Veteran husband.  For those of you not aware William served in the Air Force from 1997-2001.  I have never made one of these before and was pleasantly surprised by the results.  The most time consuming part is peeling all of the apples, so I recommend enlisting some help. :)  I used Fuji apples, but you can use whatever kind you prefer. Lazy Samoas

These were always my family's favorite Girl Scout cookies.  We had to buy like 4 boxes of them and they were gone in a matter of days.  I got this recipe from the cookbook Vegan Cookies Invade Your Cookie Jar.  I made a couple of changes to accommodate what I had on hand. The recipe calls for all-purpose flour, but I used Whole Wheat Instead and I did not have coconut oil so I used Safflower Oil. They turned out so delicious and so similar to the real thing. Grandma’s Orange Cookies Gluten Free

I dont' know how Grandma Myers would feel about this, but I have adapted her Orange cookie recipe to make it Vegan and Gluten Free.  Orange cookies were always one of our favorite things about a trip to Grandma's house.  She always made so many we got to eat them there and she sent some home with us.  I have also cut her recipe in half because the original made 4 dozen.  Wow!!! Grandma's Orange Cookies (Makes about 2 dozen) For Cookies: 3/4...
