Eggless Egg Salad

For the past few weeks I have been working out really hard.  I started doing P90X which is a real butt kicker. That combined with the fact that the temperature outside is already in the high 90's is changing my eating habits a little.  So for lunch today after my workout I wanted something light, but satisfying.  I have seen lots of recipes for eggless egg salad in the past, so I decided to take my favorite aspects from a couple of them and combine that with the ingredients...

Cold Veggie Pizza

I served this one up at our Holiday Party this year and have had several requests for the recipe.  After much anticipation here it is for you.  And before anyone asks.  Yes, surprisingly Pilsbury Original Crescent Rolls are Vegan.  I had to do a little research on this and some issues arose as to the DATEM, diacetyltartaric acid esters of monoglycerides, which is often from animal sources, and is found in the ingredients list.  Luckily for us, someone wrote to Pilsbury and inquired on the matter.  Their entire response can...

I had trouble finding oyster mushrooms in Lake Charles, finally I found dried ones at Albertson's.  For anyone who tries this recipe 1 oz. dried oyster mushrooms = 4 oz fresh oyster mushrooms.  Soak them in lukewarm water for 30 mins.-1 hour before cooking. I also reduced the recipe a little since it would just be...

Tofu Fish Sticks and Willie’s Coleslaw

This is one of my favorite things to make.  I have done it several times and changed the recipe until I have achieved perfection.  Bread crumbs can be used instead of cracker crumbs.  I just have a hard time finding any that are Vegan.  William made his famous coleslaw to go with it, served up with some vegetarian baked beans.  This dinner was amazing! Vegan Tofu "Fish" Sticks 1 (12 oz) package Extra Firm Tofu 1 Cup Crushed Cracker Crumbs or Breadcrumbs 2 tsp Kelp Powder 1/2 tsp...
