Vegan Recipes Using Nutritional Yeast

Vegan Brie

In my vegetarian days I always enjoyed a good brie.  Since then I have wanted to try my hand at making one.  I started with the recipe from The Ultimate Uncheese Cookbook by Joanne Stepaniak and adapted it and changed it to suite my own tastes.  I also wanted to make a brie that was hot and inside a pastry.  The afore mentioned is a cold brie so I had to change it quite a bit.  This is a very easy recipe, although it is a little time consuming.  The "cheese" has to set for at least 4 hours and...

Super Easy Kale Chips

So, I know I posted about Kale Chips once before, but this is an alternative recipe for making them that is faster and easier.  Kale is so very good for you so make these for a snack or a side to go with your lunch. Kale is very high in beta carotene, vitamin K, vitamin C, lutein, zeaxanthin, and reasonably rich in calcium. Kale, as with broccoli and other brassicas, contains sulforaphane (particularly when chopped or minced), a chemical with potent anti-cancer properties. Boiling decreases the level of sulforaphane; however, steaming, microwaving, or stir frying do not result in significant loss. Along with other...

Eggless Egg Salad

For the past few weeks I have been working out really hard.  I started doing P90X which is a real butt kicker. That combined with the fact that the temperature outside is already in the high 90's is changing my eating habits a little.  So for lunch today after my workout I wanted something light, but satisfying.  I have seen lots of recipes for eggless egg salad in the past, so I decided to take my favorite aspects from a couple of them and combine that with the ingredients...

Vegan Sausage Patties

I used to really enjoy the Morningstar Sausage Patties in my Vegetarian days, but since they are not Vegan friendly I decided to try my hand at making my own.  I know there are other brands that are Vegan, but I just prefer to make my own.  This list of ingredients looks long, but keep in mind that most of it is spices and you can omit a couple if you do not have them.  The fennel is a must, as is the Cayenne and Black Pepper, but the rest is just the combination I came up with...

Happy New Year Quiche

Happy New Year to all!!  Welcome to 2011.  I hope this year brings health, happiness, and success to everyone.  This also marks the 1 year anniversary of the Coppage house going vegan.  We continue to be happy about this decision and are learning and growing as people because of it.  It is still a struggle to go out and eat and it is a constant battle of defending our decision to other people, but we know this is right for us. To continue with the tradition of black eyed peas...

Jalapeno Popper Dip

I made this once before when I was a vegetarian and it was so amazing.  Friday night I attended my friend Allie's birthday party which was a chips and dip party.  I though this would be the perfect opportunity to make this dip again Vegan style.  Both of my local stores were out of the regular tofutti so I had to use the herbs and chives kind.  I think it adds to the flavors, but you can use either kind.  I have to say this version is just as delicious as...

Tofu Scramble, Hash Browns, and Cinnamon Raisin Bread

Yesterday we slept in late and I decided when we woke up that I wanted a super yummy breakfast.  It is rare that we sleep in and ever rarer that I can get William to eat breakfast with me.  So I went all out for this one.  We had (all homemade) cinnamon raisin toast, tofu scramble, and hashbrowns.  We also had fruit, coffee, and orange juice.  It was glorious.  I had some leftovers of it for breakfast today as well and it was still...

Tofu Bacon

This is a really tasty recipe for Tofu Bacon.  William loves it when we get to make BLTs so I tried this new recipe for him.  I have done Tempeh bacon before which is delicious, but I think I like this one better... Vegan Tofu Bacon Ingredients: 1 package Extra Firm Tofu 1/2 Cup Water 1/2 Cup Tamari or Soy Sauce 2 Tbsp Nutritional Yeast

Sunday Funday Quiche

Every now and again we like to get together with our friends and let loose on Sunday.  This week we decided to have a brunch picnic in the park.  We had coffee, mimosas, fruit, hummus, fresh pitas, and vegan quiche.  Then we ran around in our clothes in the water park!!!  For my quiche I used a store bought vegan friendly crust and filled it with kale, baby portobellos, red onion, and tomatoes.  The crust is not necessary if you do not have access to one and you can...
