Veggie Soup with Seitan

As I had warned, here come the soups.  This one was super delicious.  I kind of made up the recipe to go along with the veggies I had on hand so you could easily substitute if you have something else in your pantry.  This recipe does require you to make or purchase seitan.  I recommend making it.  I have eaten the pre-made kind and I don't think it is anywhere near as tasty as when you make it yourself.
